Brian Peacock takes over Dad’s Diner

COPAKE FALLS — Nestled at 178 County Route 7A in Copake, the familiar brick Dad’s Diner saw longtime employee Brian Peacock take over as owner earlier this year.

A resident of Copake since he was 18, Peacock began working at Dad’s Diner around the time he first moved to the area. Starting out as a dishwasher, he soon learned how to operate the diner through the different ranks, advancing from prep cook to kitchen manager to now, owner.
